Both of these plants have rhizomes that are used as a source of flavor and aroma. Both are used widely in the preparation of Asian dishes, especially Thai cuisine. Kaempferia galanga has attractive, rounded, strongly veined foliage and small, simple, white towers. It is low grow­ing and the rhizomes, or roots, multiply rapidly in tropical regions. Outside the tropics, this plant dies down completely with the onset of cool weather. Alpinia galanga has tall, upright, cane-like growth, typical of all species of Alpinia. It spreads by running rhizomes, rapidly forming large clumps under consistent warm, humid conditions.

Cultivation

In frost-prone climates, grow plants in a warm, humid greenhouse or conservatory, in pots of soil-based potting compost. Ensure good light but shade from direct sun. Water normally in growing season, but in winter keep Kaempferia dry during dormancy and water Alpinia only moderately. Propagate by division in spring.
