Burnet

Sanguisorba minor
Family: Rosaceae

This perennial herb has pretty, fern-like leaves and clusters of green-white, thimble-shaped flowers in summer. It grows to around 30 cm (12 in) in height and can be used as ground-cover, provided the flower stalks are cut off, as they scatter seeds freely. The leaves have a pleasant, cucumber-like flavor and can be used in salads and in fruit drinks or punches.

Cultivation

Burnet is quite hardy and will do well in most climates. Plant in well-drained, moderately rich soil in a sunny position and give plenty of water in dry weather. Fertilize in spring if soil is very poor. Propagate from seed or by division in autumn or spring. Once established, burnet will self-sow.
